I.O. Shen

I have used many fine Japanese Yanagiba and have my favorites. I recently bought a rather inexpensive I.O. Shen, a Taiwanese blade, Rockwell 62 sandwiched between Rockwell 10. This knife greatly impressed me. The 270mm is wonderfully sharp and I use Shun whetstones only to restore the cutting edge which lasts a long time. I have retired my other very fine yanagibas for awhile. The Chinese technology will take market share but I guess the traditionalists will stay with the Japanese brands. Congratulations I.O. Shen.
